These organic apricots are unsulphured, meaning no sulfur dioxide is used to keep them bright orange. Because of that, they’re not golden-orange but turn naturally darker (more brown) as they dry.
We prefer unsulphured apricots because skipping the added sulfur preserves their natural flavor, making them taste richer, juicier, and less dry. It only affects the color by allowing them to turn naturally darker. They’re also better for your health, since they don’t contain sulfur dioxide, which can irritate the lungs, trigger headaches, and cause reactions in people who are sensitive to sulfites.
